Honey Poppy Seed Dressing

Serves: 4 to 6

1 teaspoon Dijon mustard
¼ teaspoon poppy seeds
2 egg yolks
2 tablespoons honey
2-3 oz. white wine vinegar
1 cup extra virgin olive oil
Salt and pepper to taste

In a large bowl, combine all ingredients except the olive oil and seasoning, and whisk all together. Slowly add the olive oil in a thin, steady stream while whisking continuously. Once the oil has been incorporated into the mixture add the seasoning to taste. Toss with salad and serve.

To Store Vinaigrette: Pour into an airtight container and refrigerate for up to one week.
